Strawberry Cream Cheese Croissants

Gourmet Girlfriend Time!

Strawberry Cream Cheese Croissants

Ingredients:

1 package of Pillsbury Crescent Rolls

1/4 cup of homemade strawberry jam

4 oz cream cheese, room temperature

1/4 cup granulated sugar

1/2 tsp lemon juice

1/2 tsp vanilla extract

1 egg + 1 tsp of water for egg wash

Directions:

Preheat the oven to 375° and line a baking sheet with parchment paper.

In a mixer fitted with a paddle attachment, mix cream cheese, sugar, lemon juice and vanilla. Cream until there are no lumps.

Unroll each crescent roll. On the fattest part of the triangle place 1 tsp on cream cheese mixture and one tsp of jam. Roll into a croissant shape.

Whisk together egg and water for egg wash and brush over each croissant.

Bake for 8-10 minutes until croissants are golden brown and inside is no longer doughy. Dust with powdered sugar if desired.

day 4....

kate to school and back again...sewed, read, downloaded the first smutty bigfoot book on kindle, changed sheets, made lunch, went to the stupid bullshit mandatory fire safety meeting on my vacation....standing outside in the snow when it's 11 degrees and a bitter wind putting out fires in a pan. just like real life....kevin took me on an emergency pepsi run on his way to work....early evening naps are sure disorientating....kate woke me up wanting to go to breanna's bday party....I freaked out when she told me it was at nicoles....since I rarely drive the car anymore and figured the road was drifted....then we thought something was up since the girls she runs with tend toward Mean Girls behavior....so we get almost there, they start texting her, we turn around at randy's, then sit on the side of the highway, she decides to go home, get to mercer square, no, no, they're just prankin' her....so go back. and now I am home. and I am suspicious. I told her to call the house phone repeatedly if she wanted to come home later. she already has a weekend chock full of plans, but she isn't content to stay home...and neither of us are good at decisions. hell, I'm not even sure I'm awake yet....

flea stuff is on my to-do list, thought I'd knock that one out after I awakened Her Highness for academic endeavors...didn't get the tube opened, holding the squirmy Miss Cuddles, trying to open it....and no wonder they jump and run and hide...shit burns! got a drop in my right eye and some on my lip.....my lip went numb for a few minutes....did the wash and splash...and felt like an idiot. also had trouble getting Sasha's open...and her toenail cut open my hand. waiting a while on Miss Daisy.....

krystal is sleepy and she cant sleep bcuz kj didnt call and talk me into a sleepy smile mode. but i love my kj. i told him that i am glad that he came into my life and i am thankful for him. i also said i do not know how else i should thank you. he said me loving him is thanks enough.

day 3

a day of family togetherness...and sleeping...and lying about on the couch....with some reading....and sewing on the quilt...and cooking...and a shower at home in my own bathroom which is always heavenly...

got the car picked up...dishes done...laundry caught up....life is good! I was meant for unemployment....found the jr hi academic schedule online....they havd 5 meets at Eagleville Monday....so will try to run over after work and catch a couple....will just be a grownup and let the 3 matches at Grundy go....I dont' know if I could get there in time for the last one at 5:30 or not.....and have the last day off to go. spelling bee is hopeless....will just have to settle for her first person account, I guess....who knew I'd be missing everything with each kid? do parents who don't work truly appreciate getting to see their kids perform and participate?
